Carnivore rising! RUB (righteous urban barbecue) and Hillcountry Barbecue now mean the pursuit of ribs no longer demands a cross country trip to Kansas or Texas.  What Calvin Trillin, the barbecue connoisseur, makes of this development has yet to be seen.  In his essay on Kansas barbecue he championed Arthur Bryants in Kansas city.  In the Tummy Trilogy, New York is barbecue exile. But no more!
